Egg Free Meatloaf
Tyler has a mild egg allergy so I have taken this traditional recipe and omitted the eggs. I actually added a twist as well. Tyler loves this:
1/4 cup ketchup
1/4 cup BBQ sauce
1/2 cup milk
3/4 cup Bread crumbs
1/4 cup grated parmesan cheese
1/4 cup finely chopped onion
1 lb lean ground beef
Heat oven to 350 degrees. In large bowl combine all ingredients. Mix well. (may need to use hands to really incorporate all the ingredients.) Press mixture into greased 8 x 4 loaf pan. Bake for 40 minutes.
Remove pan from oven. Spread another 1/4 cup of ketchup over top. Return to oven for 15 minutes.

Your recipe for egg free meatloaf was wonderful. My great nephew is allergic to eggs and soy products. My niece was very happy to make his favorite dish without eggs. I’ve been experimenting baking egg free for my great nephew. I come up with two moist cakes. The first one is a strawberry lemonade cake and a milk cake. He loves them both. I’m baking them for his birthday on August 8th. Thank you.

I am so glad your great nephew enjoys this! Its so easy. Not sure if your niece has looked into this but I use a powdered egg free substitute for Tyler when I make pancakes, waffles, cookies, etc. It is called Ener-G Egg replacer. Its fantastic. There is a website http://www.ener-g.com that you can look to see what stores carry it near you. I gave my friend this for her step son who also has egg and soy allergies and he is now enjoying all of the things that he has missed for so long. Hopefully this helps your family as well!
