Pasta Sauce
While I can’t give you all my ingredients, as that what makes this my sauce, I thought I would share the majority of the recipe with you. This is a great Sunday fix as it fills the house with that warm aroma of fall and winter. Ahh, comfort food.
~ 1 lb plain Italian sausage
~ 2 Tablespoons olive oil
~ 2 garlic cloves finely chopped
~ 1/2 Cup dry white wine. ( I have found that Santa Rita 120 Chardonnay adds a lot of flavor)
~ 1 28oz can of crushed tomatoes
~ salt and pepper to taste
Remove the sausage from casings and fine chop the meat. In a large pot, heat oil over medium heat. Add the sausage and garlic. Stir frequently until sausage is lightly browned. Add the wine and bring to a simmer. Cook until most of the wine evaporates.
Stir in the tomatoes and add salt and pepper to taste. Bring to simmer. Reduce heat to low and cook, stirring occasionally, until sauce thickens (about 1 – 1.5 hours). Add to your favorite pasta.
